Strawberry Lemonade Popsicles

It may be after Labor Day, but with the temperatures being up in the high 80s this week it is still definitely popsicle weather. These strawberry lemonade popsicles are a summer favorite. The combination of the sweet strawberries and the tangy lemon make them the perfect refreshing treat. My kids have even been forgoing desserts at synagogue so that they can have a popsicle when they get home.

I love this particular recipe because it makes popsicles that have nice chunks of strawberries in then, which gives them some textural interest. It takes a bit longer to make these popsicles than just pouring juice into the molds but the end results are so good I don’t mind. Macerating the strawberries in sugar for an hour does two things. It creates the syrup that then sweetens the Popsicles and also makes it so that the strawberry pieces don’t freeze too hard. The end result is worth the wait.

Ingredients & Quantities

  • 1/2 pound fresh or frozen strawberries
  • Slightly generous 1/4 cup (2 oz) sugar
  • 1/4 cup fresh squeezed lemon juice
  • 2 cups water

Preparation Instructions

Coarsely chop the strawberries and place them in a container with a lid. Pour the sugar over the strawberries, cover with the lid and shake well to thoroughly combine them. Let stand at room temperature, shaking occasionally, for 1-2 to hours, or until the sugar dissolves and the strawberries release their liquid. (They can also be refrigerated overnight).

Add the remaining ingredients and pour the mixture into popsicle molds. Freeze until firm.
