Fun with Mike and Ikes

Now that the fall holidays are over and the baby is almost two months old (when did that happen!) I am hoping to carve out a bit more time for blogging again. Since time is a bit on the short side these days I wanted to jump back into the swing of things with some fun crowd-pleasing recipes that are not too labor intensive. When the wonderful people at Joy of Kosher asked if I could develop some recipes using Mike and Ike candies I jumped at the opportunity. While I try to eat an overall healthy and balanced diet I have to admit that Mike and Ike candies are one of my weaknesses. This gave me an excuse to buy them in bulk!These recipes are just the things to throw together for a quick treat. They are also a great way to use up leftover candy from decorating candy sukkot (I may have overbought by quite a lot and have been throwing candy into every dessert I can think of).

These rice krispy treats are the perfect platform to show off the flavor of the candy. The chewiness of the candy matches the chewiness of the rice krispy treat in a way that makes you keep coming back for “just one more small one”. The flavor of the Mike and Ikes is very pronounced so these are sure to be a hit with any Mike and Ike lover.

These lemon cookies highlight the lemonade flavored Mike and Ikes. The cookie is soft, chewy, and lemony, and the bits of candy give it an extra burst of flavor that takes the cookies to the next level. They are sure to be the hit of the party!
