I agree that Alprose is great, but have you tried Schmerling 70% bittersweet? Excellent. 

Great idea to use hazelnut with chocolate--I love that combination. I just made Beacon Hill cookies (Alice Medrich version) and used pecans, but hazelnuts would have been even better. There is something about hazelnuts and chocolate that is uber sophisticated.</description>
