I'm in Raleigh and I made cookies with my kids in honor of Tu B'shevat too. I used a basic oatmeal cookie recipe, but used chopped dates and figs in addition to the raisins and subbed a little light olive oil in place of butter (making them pareve and using another of the 7 Species).

Ater baking I found some "Quick Barley" which is rolled barley - much like you'd find traditional rolled oats and next year I'm hoping to use barley in place of the oats too!

Now if I could only find a way to get the pomegranate in there!

I have some wonderful mango/date preserves and I think these cookies (yours and mine) would be wonderful sandwiched together with that!
-Leslie
Raleigh, NC

Ater baking I found some "Quick Barley" which is rolled barley – much like you'd find traditional rolled oats and next year I'm hoping to use barley in place of the oats too!

Now if I could only find a way to get the pomegranate in there!

ב''ה

Etrog Linzer tarts. What a nice idea. Happy Tu Be'shvat and Shabbat Shalom! :)

P.S. I am also from Northern C.A. originally and my grandparents there grew one tree each of the seven kinds in their yard (except for wheat and barley.)
