I just stumbled upon this blog and recipe, and am excited! My daughter has been off dairy (and beef) for six months, and will need to continue for a few years probably. It's been a fairly easy transition, thank goodness! I want to make a dairy-free pumpkin pie this year, and have thought about using So Delicious unsweetened coconut milk, which we like using for baking/pancakes, since it has a great mouthfeel and no discernible coconut flavor. (We like coconut, but we don't want everything tasting of it.) I may try the plain So Delicious coffee creamer, though, as it's heavier. But after reading the results on Chowhound of Jennifer's pie made with Asian-style coconut milk (which I always have in the house), I may have to try that version. I'd be more comfortable with one of those than, say, soy powder, which I have not used and don't keep in the house. Anyway, great blog with wonderful recipes (we don't keep kosher, but I have friends and family who do - some of whom have dairy issues, as well - and have passed it on). Thanks!

Just wanted to add here that I finally made a delicious, pareve pumpkin pie using coconut milk this week... thought this might be helpful to readers who don't love soy milk. The coconut adds it own mild but delightful subtext to the story of the pie. ;-)
Here's the (super-easy) recipe I found:
http://chowhound.chow.com/topics/568286

mmm, thanks for posting this! I've been looking for a new parve pumpkin pie recipe. I like putting mine in a graham cracker crust (the Keebler ones are OU parve!), I think it adds the extra ooph that the cinnamon ice cream does, without the ice cream :D
