Passover Chocolate Chunk Bars

Passover desserts usually fall into one of two categories, light and airy or rich and dense. These bars from Cookie Madness fall somewhere in the middle. They are light but not airy, with nice sandy texture, and taste like a light chocolate chip blondie. I apologize for the terrible picture. I didn’t have my camera with me and they were quickly being devoured so I snapped a picture with my phone.

I am always tempted to make over the top outrageous desserts for the seder, but people are often so full by the time you get to dessert that sometimes a plate of assorted cookies is actually more what people are looking for. (Not that they won’t eat a raspberry molten chocolate cake if you put it in front of them.) These chocolate chunk bars are good following a heavy meal because they are satisfying but not heavy or overly filling. As always, use the best chocolate you can get because the flavor of the chocolate really comes through in these bars.
I preferred these bars warm, but they were well received at room temperature the next day. I have to admit, I though these were just ok, but other people loved them. (And it wasn’t passover yet so people thought they were good in general, not just “good for passover.”)
One warning. These bars are quite delicate, so I wouldn’t recommend cutting them before transporting them somewhere because they may crumble.

Shoshana,

I just stumbled upon your blog while I was searching google to see if peanut butter is parve or not.

Your blog is wonderful. I have been keeping kosher for 3 weeks now and have so much to learn.

Can you tell me, is all peanut butter parve?

I am glad you enjoy my blog! I am happy to help in any way I can as you embark on the exciting journey of keeping kosher.

To answer your question all peanut butter without any additives is theoretically parve. Most major brands of peanut butter are certified parve (Skippy, Jif etc as well as most natural brands).

There may be brands I am not aware of that have dairy additives, so check the labels for a kosher certification to be sure. (usually found somewhere on the front of the label) If they are dairy there will be a D next to kosher symbol.

Shoshana,

Thank you so much for your help. I really appreciate it. I live in Boise, Idaho and finding kosher food is a bit like going on a treasure hunt. However, I am having so much fun.

After Pesach, I am going to have my Rabbi kasher my kitchen. I am really looking forward to this as well.

The only thing that is a little difficult for me is letting go of all of my dishes.

Just think of it as a great opportunity to get new dishes!

There are several great online kosher grocery stores, so if there are things you can’t get you can always order them.
